Pilau Recipe (Serves 4-6)

Ingredients

  • 2 cups Mwea Pishori rice

  • 2 tablespoons pilau masala
  • 2 tomatoes (chopped)
  • 2-3 potatoes (optional)
  • 1/2 cup vegetable oil

  • 4 cups water or beef/chicken stock

Instructions

  1. Rinse the Rice: Wash Mwea Pishori rice thoroughly under cold water until the water runs clear. Set aside.
  2. Prepare the Meat: Heat oil in a large pot, and fry the cubed meat until browned. Remove and set aside.
  3. Fry the Onions: In the same pot, add the sliced onions and fry them until golden brown.
  4. Add Ginger & Garlic: Stir in the crushed garlic and grated ginger. Cook for 1-2 minutes.
  5. Add Spices: Mix in the pilau masala and stir for 30 seconds to release the aromas.
  6. Add Tomatoes & Potatoes: Stir in the chopped tomatoes and cook until soft. Add the potatoes if using.
  7. Return the Meat: Add the browned meat back to the pot and mix well.
  8. Add Rice & Water/Stock: Add the rinsed rice to the pot and pour in the water or stock. Stir to combine.
  9. Cook the Rice: Bring to a boil, then reduce the heat to low, cover, and let simmer for 20-25 minutes or until the rice is fully cooked and the liquid is absorbed.
  10. Fluff & Serve: Once done, fluff the rice with a fork and serve your aromatic pilau hot with kachumbari or a side of your choice.
